I unfortunately cant take the credit for this one, I stumbled upon it on a great blog, InKatrinasKitchen...so your thighs can blame Katrina...not me!!
I will let her fantastic recipe speak for itself, but now that I have made these bad boys, I will add these tips/reminders (in case anyone is as hopeless as me in the kitchen!)...
--use any cookie recipe you would like, but ensure the cookies typically come out more solid. I used my Dr Oetker cookie dough and some fell apart because they are very soft even after baking!
--I had to heat the cream a little right before putting it in the cookie cups to make it more liquid.
--If you are using something to manually press the cookie into a cup (I used the base of a shot glass), make sure you do it when the cookies are mostly cooled, and you have loosened them from the muffin tray!
